Starting with OpenOffice Writer
First you should look at Dai's series, he covers the basics of editing and mail-merge. Dai's series covers the slightly out-of-date OpenOffice 3.0.
Next look at Ian's Club series, it covers the current OpenOffice 3.1 and takes you through moving from MS Word to Writer, sharing .doc files and performing all the usual tasks.
